California Potato Salad

I experimented today with an infrequently-made favorite of mine: German Potato Salad

Hope you enjoy some of the creative liberties I took with this classic dish


 German Potato Salad, California Style

German Potato Salad, California Style

Ingredients

  • 24 oz Baby Red potatoes
  • 2 leeks, sliced
  • 1 tbsp butter
  • 1/4 white wine
  • 3 green onions, sliced
  • 1/3 cup rice wine vinegar
  • salt and pepper to taste

Directions

  1. Bring water to a boil in a large pot. Boil potatoes for 15 minutes or until cooked through. Drain and set aside to cool.
  2. In a sauce pan, melt the butter and add leeks. Cook for 5 minutes. Add the wine, cook for 2 minutes. Add vinegar, bring to a boil, then remove from heat.
  3. Dice potatoes into chunks and add to a bowl. Pour leak mixture over potatoes and stir to combine. Add in green onion and salt and pepper to taste. Serve warm.
