California Potato Salad
I experimented today with an infrequently-made favorite of mine: German Potato Salad
Hope you enjoy some of the creative liberties I took with this classic dish
- 24 oz Baby Red potatoes
- 2 leeks, sliced
- 1 tbsp butter
- 1/4 white wine
- 3 green onions, sliced
- 1/3 cup rice wine vinegar
- salt and pepper to taste
- Bring water to a boil in a large pot. Boil potatoes for 15 minutes or until cooked through. Drain and set aside to cool.
- In a sauce pan, melt the butter and add leeks. Cook for 5 minutes. Add the wine, cook for 2 minutes. Add vinegar, bring to a boil, then remove from heat.
- Dice potatoes into chunks and add to a bowl. Pour leak mixture over potatoes and stir to combine. Add in green onion and salt and pepper to taste. Serve warm.
